Chunky creamy cauliflower and bacon soup! A comfort food for fall.🍁🍂 #keto #ketofriendly #lowcarb #lowcarbhighfat #homecooking #organic #cauliflower #bacon #onion #heavycream #blender #vitamix #vegetables #fiber #soup #souptime #eatwell #eatclean #eatathome #comfortfood. Ingredients: - 1/2 a head of cauliflower. -1 white onion and 3 cloves of garlic. -6 strips of cooked bacon. -1/2 cup heavy cream. Directions: 1. Sauté garlic and onion with olive oil. Then add the cut cauliflower florets to the same pot with the garlic and onion mixture. Stir until cauliflower is almost cooked. 2. Add 4 cups of vegetable or chicken broth, add s&p, cumin, and paprika. Let the mixture simmer. 3. Scoop out the cauliflower florets, blend in your blender with 1/2 cup of heavy cream and half of the bacon. 4. Return blended mixture to the pot. For chunky texture, save one cup of cooked cauliflower and lightly chop the florets. Add back to the soup. Top the soup with the remaining chopped bacon.
